Caramelized Onions And Blue Cheese Pizza

Do you want an alternative to your regular pizza recipe? Try this for a change: caramelized onions and blue cheese as main ingredients! Turn this recipe into a main meal by tossing with cooked pasta and grated Canadian Parmesan cheese.

Ingredients:
1 12-inch pre-baked pizza crust
1 1/4 cup caramelized onions
1 cup buttered sauteed mushrooms
3 tbsp chopped and toasted walnuts
1 cup blue cheese, crumbled
For caramelized onions:
2 tbsp butter
5 cups sweet onions, halved horizontally and thinly sliced
1 tbsp sugar
1/4 tsp salt
For butter sauteed mushrooms:
1 tbsp butter
3 cups  sliced mushrooms
1 clove garlic, minced
1/4 tsp dried thyme
Salt and freshly ground black pepper, to taste
Directions:
Preheat oven to 425 °F. Place pizza crust on a baking sheet or a pizza pan. Spread all the ingredients over the crust, starting with the caramelized onions. Top everything with the buttered sauteed mushrooms, walnuts and blue cheese. Bake for 8-10 minutes or until cheese is bubbly. Let it cool for 5 minutes before cutting.
Directions for Caramelized Onions:
 
In a large skillet, melt the butter over medium heat; add onions, sugar and salt. Cook, stirring occasionally, for 30 minutes or until onions are very soft and caramelized. If the onions are starting to brown too quickly, reduce heat to medium-low. Set aside to cool.
Directions for Butter Sauteed Mushrooms:
In large skillet, the melt butter over medium-high heat; add mushrooms, garlic, thyme and salt. To provide a unique flavor use a selection of different types mushrooms. Cook stirring occasionally, for about 8 – 10 minutes or until mushrooms are tender and liquid is evaporated. Season with black pepper to taste. Set aside to cool.
Exta Tips:
Spanish onions will do well in this recipe. If the onions are starting to brown too quickly, reduce heat to medium-low.
 
This recipe is great to serve at any party. I used Canadian Bleu Benedictin cheese in this recipe, but you can also try Danish or French blue cheese. Prepare this recipe faster by purchasing pre-sliced mushrooms and garlic in jars or frozen cubes.
