Each food is different; it could be slightly acidic and alkaline, depending on the composition. In general, we should eat 20 percent acid-forming food and 80 percent alkaline foods.

Highly alkaline food include a number of fruits, such as mangos, all melons, guavas, grapefruit, grapes, figs, dates, currants, cherries, cantaloupe, cactus. All berries, speckles bananas, avocados, apricots, apples and even citrusy fruits, like lime and orange. On the other hand, acidic fruits include “green” fruits that are not ripened yet, as well as pickled fruits, sugar-preserved fruits, sulphured foots and dried fruits.

Most vegetables are alkaline, such as carrots, cabbage, broccoli, beans, bamboo shoots, asparagus, cauliflower and others. On the other hand, rhubarb, lentils, garbanzos, Brussels sprouts, dried beans, white asparagus tips and artichokes are considered as acidic veggies. Some dairy products are generally considered as alkaline, such as kefirs, clabbered milk, yogurt, whey, buttermilk and acidophilus cultured milks. A few of these products may be sour, but they encourage the formation of alkaline compounds in our stomach. Acid-forming dairy products usually include pasteurized milk, custards, sherbet, ice cream, cheese and butter.

It should be noted that meat-based food are generally acidic, these include poultry, bird, fish, venison, goose, chicken, pork, lamb and beef. Only blood and bones are the least acidic of animal-based food. This means, it is a good idea to eat the bone as well, when we eat pressure-cooked fishes and meats. Alcoholic beverages should be considered as acid and most grains are acid as well. The most alkaline nut is raw almond and buckwheat is the most alkaline grains.

Water is the most neutral thing that could enter our body. It is also necessary to balance our meat-based fat intake; with plant-based ones, such as oils from sesame and olive.
